Pan-Seared Chicken & Toasted Indian Spice

Toasted spice and coriander finishing butter. An aromatic blend of spices, perfect to jazz up any meal.

100g Flavour Fiend Toasted Indian Spice Finishing Butter

800g Skinless, boneless happy chicken thighs

1 Sliced red onion

1/2 A green and red capsicum cut into thin strips

1/2 cup Cream

Sea salt

Fresh ground black pepper


For superior taste use free range ‘happy’ chicken. Cut the chicken into large strips and season with salt and pepper.
Preheat a large heavy pan with a little oil until smoking. Sear the chicken and colour on both sides, then add the onion and capsicum. Sauté until the chicken is cooked and the vegetables are wilted, yet still crunchy, then add the cream.
Simmer a moment to reduce, then remove from heat and rest for a minute. Add the chilled Toasted Indian Spice Finishing Butter bit by bit, swirling the pan to melt the butter into the pan juices. Yum!
Serve with brown rice, tomato & coriander salad and a cold, crisp beer.
